A glance at the display tells you the temperature now. It cannot tell you what happened overnight, or during the hottest part of an afternoon while you were out.
That is when things go wrong. Enclosures overheat when afternoon sun reaches the room, or fall far colder overnight than the keeper realises, and an animal can spend hours a day outside its safe range while every spot-check looks perfectly fine. The min/max memory records the extremes, so you see the real daily swing.
This is not a minor detail. Reptiles held too cool stop digesting properly and can develop gut impaction with food still inside them; held too hot, they overheat quickly and have limited means of cooling down.
It reads conditions where the animal actually is, rather than on the outside of the glass or up in the canopy. Two ends of the same terrarium can differ by 10°C or more — which is the point of a gradient — so where you put the sensor determines what the number means.
